Mountain Dew Cake



I have a scrapbook club in Danville, WV filled with some of the BEST women on the face of this planet! They are passionate about papercrafting and GOOD FOOD! Here is a recipe I got from Claire in Danville. I made it for the girls at my workshop last night. Super easy to make - and "melt in your mouth" good to eat! I didn't have time to run to the store, but next time I'd serve it with fresh berries and a mint sprig and maybe a small dollop of whipped cream!

Claire's Mountain Dew Cake

1 box Yellow Cake Mix (any brand)
½ cup Mountain Dew Soda
4 eggs
1 box Instant Vanilla Pudding (large box)
½ cup water
½ cup vegetable oil

Mix above ingredients. Pour into a greased and floured Bundt cake pan. Bake at 325 degrees for 50-60 minutes. While the cake is baking, mix the glaze. You want to mix this during the last 20 minutes the cake is baking so it will still be warm to pour on the cake.

Glaze:
1 stick butter or margarine
1 cup sugar
¼ cup Mountain Dew Soda

Bring the above 3 ingredients to a boil. When cake is done, remove from oven, but DO NOT remove from the pan yet. Use a skewer or bamboo stick and punch lots of holes over entire cake, pour warm glaze over entire cake while cake is still hot. Wait a few minutes to allow glaze to soak in. Remove cake from pan and serve! (Optional: serve with fresh berries and mint sprigs.)
